Marinating the Chicken

    In a bowl, combine soy sauce, mirin, sesame oil, minced garlic, grated ginger, and black pepper. Mix well.

    Marinate the Chicken

    Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Cooking the Chicken

    Cook the Chicken

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove from the skillet and set aside.

Stir-Frying the Vegetables

    Stir-Fry the Veggies

    In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced bell pepper, julienned carrot, and broccoli florets. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
