Prepare Sushi Rice

Rinse the Rice
Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker instructions or bring to a boil, then cover and simmer for 15-20 minutes until all water is absorbed.

Season the Rice
Once the rice is cooked, transfer it to a large bowl. In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then gently fold this mixture into the rice. Allow it to cool to room temperature.

Slice the chicken breast into thin strips, about 1/2 inch wide.

Prepare the Batter
In a mixing bowl, combine the tempura batter mix with cold water until you achieve a smooth batter.

Heat the Oil
In a deep pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature.

Dip the chicken strips into the tempura batter, allowing excess batter to drip off. Carefully place them in the hot oil, frying in batches for about 3-4 minutes or until golden brown. Remove and drain on paper towels.

Roll the Sushi
On a bamboo sushi mat, place a nori sheet shiny side down. Wet your hands and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.

Roll it Up
Using the bamboo mat, carefully roll the sushi away from you, pressing gently to shape it into a tight roll. Seal the edge with a little water.

Slice the roll into 6-8 pieces with a sharp, wet knife. Serve with soy sauce and wasabi on the side.
