Method

Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse it under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or a pot, combine the rinsed sushi rice and water. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit for an additional 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spoon. Let the rice cool to room temperature.

Prepare Fillings

    Slice the Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh out. Slice it into thin strips.

    Slice the Cucumber

    Cut the cucumber in half lengthwise, remove the seeds, and slice into thin strips.

    Prepare the Crab

    If using imitation crab, break it into smaller pieces. If using real crab, shred it into bite-sized pieces.

Rolling the Sushi

    Lay Out the Nori

    Place a bamboo sushi mat on a clean surface and lay one nori sheet shiny side down on the mat.

    Add the Rice

    Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    Place a line of crab meat, avocado slices, and cucumber strips along the bottom edge of the rice-covered nori.

    Roll the Sushi

    Starting from the edge closest to you, lift the bamboo mat and roll it away from you, pressing gently to form a tight roll. Continue rolling until the nori is sealed with the rice.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces, wetting the knife between cuts to prevent sticking.

    Garnish and Serve

    Sprinkle sesame seeds over the sushi rolls and serve with soy sauce for dipping.
