Method

Burger Patty

  1. 1

    Cook the Steakburger Patty

Preheat a grill or skillet over medium-high heat. Season the 1/2 lb steakburger patty with salt and pepper. Cook for about 4-5 minutes on each side for medium rare, or until desired doneness is reached. Remove from heat and let rest.

Pulled Pork

  1. 2

    Prepare the Pulled Pork

If using pre-cooked smoked pulled pork, simply heat it up in a saucepan over low heat until warmed through. If starting from raw pork, slow cook the pork shoulder with spices and BBQ sauce until tender, then shred.

Cheese & Bacon

  1. 3

    Cook Bacon and Assemble

In a skillet over medium heat, cook the hickory smoked bacon slices until crispy, about 5-7 minutes. Drain on paper towels. Once the burger is cooked, place a slice of cheddar cheese on top of the patty to melt slightly.

Onion Straws

  1. 4

    Make the Onion Straws

Slice the large onion into thin rings. In a bowl, combine buttermilk with salt and black pepper. Soak the onion rings in the buttermilk mixture for at least 30 minutes. Dredge the soaked onion rings in flour, ensuring they are well coated. Heat vegetable oil in a deep pot to 350°F (175°C). Fry the onion rings in batches until golden brown and crispy, about 2-3 minutes per batch. Remove and drain on paper towels.

BBQ Sauce

  1. 5

    Prepare BBQ Sauce

If using pre-made Bucktown Stout BBQ sauce, simply have it ready to use. If making from scratch, combine stout beer with ketchup, brown sugar, and spices in a saucepan and simmer until thickened.

Assembly

  1. 6

    Assemble The Wickedest Burger

To assemble, place the brioche bun on a plate. Add the cooked steakburger patty topped with melted cheddar cheese, followed by a generous portion of smoked pulled pork. Place two crispy bacon slices on top and finish with a handful of crispy onion straws. Drizzle with Bucktown Stout BBQ sauce and top with the other half of the bun.
