Steak Marinade

Method

Marinating the Steak

    Prepare the Marinade

    In a mixing bowl, combine soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, honey, and black pepper. Whisk until well combined.

    Marinate the Steak

    Place the flank steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Cooking the Steak

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and discard the marinade. Grill the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Once cooked, remove the steak from the grill and let it rest for 5-10 minutes before slicing. This helps retain the juices.

    Slice the Steak

    After resting, slice the steak against the grain into thin strips.

Assembling the Tacos

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

    Fill the Tacos

    Lay the warm tortillas flat and add a portion of the sliced steak to each tortilla. Top with halved cherry tomatoes, pickled red onions, crumbled queso fresco, and chopped cilantro.

    Add Chimichurri

    Drizzle chimichurri sauce over the filled tacos for added flavor.
