Marinating the Steak

Prepare the Marinade
In a bowl, whisk together soy sauce, rice vinegar, honey, minced garlic, grated ginger, sesame oil, and black pepper until well combined.

Marinate the Steak
Place the steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
Preparing the Toppings

Pickle the Onions
In a small bowl, combine thinly sliced red onion with a pinch of salt and a splash of vinegar. Let sit for at least 30 minutes to soften and pickle.

Prepare the Tomatoes and Cilantro
Halve the cherry tomatoes and chop the fresh cilantro. Set aside for serving.

Preheat the Grill
Preheat your grill to high heat (about 450°F to 500°F).

Assemble the Dish
Slice the rested steak against the grain. Serve on a platter, topped with pickled red onions, halved cherry tomatoes, crumbled queso fresco, and chopped cilantro. Drizzle chimichurri sauce over the top.
