Method

Prepare the Fish

  1. 1

    Make the batter

In a mixing bowl, whisk together the all-purpose flour, baking powder, salt, and pepper. Gradually add the Hefeweizen beer, stirring until the batter is smooth. Let it rest for about 15 minutes.

  2. 2

    Heat the oil

In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

  3. 3

    Fry the fish

Dip each white fish fillet into the batter, ensuring it's fully coated, and carefully place it in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the oil and drain on paper towels.

Assemble Tacos

  1. 4

    Prepare the tortillas

Warm the flour tortillas in a dry skillet or microwave until pliable.

  2. 5

    Layer the ingredients

On each tortilla, place a generous amount of guacamole, followed by shredded lettuce, fried fish pieces, pickled red onions, and fresh cilantro.

  3. 6

    Add pineapple creme

Drizzle pineapple creme over the top of the assembled tacos.

  4. 7

    Serve

Fold the tortillas over the fillings and serve immediately, with extra lime wedges if desired.
