Method

For the Fish

    Prepare the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the Welz Guy Hefeweizen beer until the batter is smooth and well combined. Set aside.

    Heat the Oil

    In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Cod

    Dip each cod fillet into the batter, allowing excess to drip off, and carefully place it in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

For the Hush Puppies

    Mix the Dry Ingredients

    In a bowl, combine the cornmeal, all-purpose flour, baking powder, sugar, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together the milk, egg, and chopped onion.

    Combine and Shape

    Pour the wet ingredients into the dry ingredients and stir until just combined. Using a spoon, drop spoonfuls of the batter into the hot oil (same as for the fish). Fry until golden brown, about 3-4 minutes. Drain on paper towels.

For the Fries

    Prepare the Potatoes

    Peel and cut the potatoes into fries. Soak them in water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Fry the Fries

    In the same oil used for the fish and hush puppies, fry the potato fries in batches until golden and crispy, about 5-7 minutes per batch. Salt to taste.

For the Coleslaw

    Mix the Ingredients

    In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well until all ingredients are combined.

    Chill the Coleslaw

    Cover and refrigerate for at least 30 minutes before serving to let the flavors meld.

For the Tartar Sauce

    Combine the Ingredients

    In a small bowl, mix together the mayonnaise, chopped dill pickles, lemon juice, chopped capers, and salt. Stir until well combined.

    Chill the Sauce

    Cover and refrigerate for at least 15 minutes before serving to enhance the flavors.
