Method

Pretzel Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, mix the warm water with sugar and active dry yeast. Let sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dough

In a large mixing bowl, combine flour and salt. Once the yeast mixture is frothy, add it along with vegetable oil to the flour. Mix until a dough forms.

  3. 3

    Knead Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.

  4. 4

    Rise Dough

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Baking Soda Solution

  1. 5

    Prepare Solution

In a large pot, bring 10 cups of water to a boil. Once boiling, carefully add baking soda and stir until dissolved.

Shaping and Frying Pretzels

  1. 6

    Shape Pretzels

Once dough has risen, punch it down and divide it into two equal pieces. Roll each piece into a long rope (about 24 inches), then shape into a pretzel.

  2. 7

    Boil Pretzels

Carefully place each shaped pretzel into the boiling baking soda solution for about 30 seconds. Remove with a slotted spoon and place on a lined baking sheet.

  3. 8

    Fry Pretzels

In a large pot, heat vegetable oil to 350°F (175°C). Fry each pretzel until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

  4. 9

    Season Pretzels

While still hot, sprinkle coarse sea salt on each pretzel.

Cheese Sauce Preparation

  1. 10

    Make Cheese Sauce

In a saucepan over medium heat, combine milk and cornstarch, stirring until it thickens slightly. Gradually add shredded cheddar cheese, stirring continuously until melted and smooth.

  2. 11

    Season Cheese Sauce

Add salt and black pepper to the cheese sauce, adjusting to taste, and stir until fully combined.
