Dough Preparation

    Activate the Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

    Mix the Dough

    In a large mixing bowl, combine the flour and salt. Add the yeast mixture and knead until a smooth dough forms. This should take about 5-7 minutes.

    Let the Dough Rise

    Cover the dough with a damp cloth and let it rise in a warm area for about 1 hour or until it has doubled in size.

Shaping & Boiling

    Shape the Pretzels

    Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope, about 24 inches long, and form into a pretzel shape.

    Boil the Pretzels

    In a large pot, bring 10 cups of water to a boil and add the baking soda. Boil each pretzel in the solution for about 30 seconds on each side, then remove and place on a baking sheet lined with parchment paper.

Frying

    Heat the Oil

    In a deep fryer or a large pot, heat oil to 350°F (175°C).

    Fry the Pretzels

    Fry the boiled pretzels in batches until golden brown, about 1-2 minutes on each side. Remove and drain on paper towels.

    Add Toppings

    Brush each pretzel with the egg wash and sprinkle coarse sea salt on top.

Serving

    Serve the pretzels hot with your choice of cheese sauce, honey mustard, or Boetje’s mustard.
