Pretzel Dough Preparation

    Activate the Yeast

    In a small bowl, combine warm water, granulated sugar, and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

    Mix the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Add melted unsalted butter and the yeast mixture. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 5-7 minutes until the dough is smooth and elastic.

    Let it Rise

    Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Shaping and Boiling

    Preheat Oil

    In a large pot, heat vegetable oil over medium heat until it reaches 350°F (175°C).

    Shape the Pretzels

    Once the dough has risen, punch it down and divide it into 8 equal pieces. Roll each piece into a long rope and shape it into a pretzel.

    Prepare the Baking Soda Solution

    In a separate pot, bring 10 cups of water to a boil and slowly add 0.5 cups of baking soda. Stir until dissolved.

    Boil the Pretzels

    Carefully place each shaped pretzel into the boiling baking soda solution for about 30 seconds. Remove and place on a paper towel to drain.

Frying and Serving

    Fry the Pretzels

    Fry the boiled pretzels in the heated vegetable oil until golden brown, about 2-3 minutes per side.

    Add Salt

    Remove the pretzels from the oil and place them on a paper towel-lined plate. Immediately sprinkle coarse sea salt on top.

    Serve the pretzels warm with hot cheese sauce.

Hot Cheese Sauce Preparation

    Make the Roux

    In a saucepan, melt 2 tablespoons of butter over medium heat. Whisk in 2 tablespoons of flour and cook for 1-2 minutes until golden.

    Add Milk

    Gradually whisk in 1 cup of milk, stirring constantly until the mixture thickens.

    Add Cheese

    Stir in 2 cups of shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
