    Slice the Steak

    Thinly slice the ribeye steak against the grain into strips.

    Chop the Vegetables

    Slice the onion and both bell peppers into thin strips.

Cooking

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers. Season with salt and pepper and sauté until softened, about 5-7 minutes. Remove from the skillet and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high. Add the sliced ribeye steak and cook until browned and cooked through, about 4-5 minutes.

    Combine Ingredients

    Return the cooked vegetables to the skillet with the steak and stir to combine. Cook for an additional 2-3 minutes to heat through.

    Melt the Cheese

    Reduce heat to low. Place slices of pepper jack cheese over the steak and vegetable mixture. Cover the skillet to melt the cheese for about 2 minutes.

Assembly

    Prepare the Hoagie Buns

    Slice the hoagie buns lengthwise without cutting all the way through.

    Fill the Buns

    Spoon the steak and cheese mixture into each hoagie bun.

    Serve

    Serve hot with your favorite condiments or sides.
