Method

Preparing the Chicken

    Marinate the Chicken

    In a bowl, mix together the whiskey, peach preserves, soy sauce, minced garlic, and olive oil. Add the chicken breasts and mix until well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

    Cook the Chicken

    Preheat your grill or skillet over medium heat. Remove the chicken from the marinade and reserve the marinade. Grill or sauté the chicken for about 6-7 minutes on each side, or until cooked through and the internal temperature reaches 165°F (74°C).

    Prepare the Sauce

    In the same pan used to cook the chicken, add the reserved marinade. Bring it to a boil, then reduce heat and simmer for about 5-7 minutes until it thickens. Drizzle this sauce over the cooked chicken just before serving.

Making Garlic Mashed Potatoes

    Cook the Potatoes

    Peel and chop the potatoes into even-sized chunks. Place them in a large pot of salted water and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the butter, heavy cream, salt, and black pepper. Mash until creamy and smooth. Adjust seasoning to taste.

Grilling Asparagus

    Prepare the Asparagus

    Trim the tough ends off the asparagus and place them in a bowl. Drizzle with olive oil, salt, and black pepper, and toss to coat.

    Grill the Asparagus

    On a preheated grill, cook the asparagus for about 4-5 minutes, turning occasionally, until they are tender and slightly charred.
