Method

For the Chicken and Marinade

    Marinate the Chicken

    In a bowl, combine the peach whiskey, olive oil, garlic powder, salt, black pepper, and fresh rosemary. Mix well.

    Coat the Chicken

    Add the thick-cut chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove chicken from marinade and grill for about 6-8 minutes on each side, or until fully cooked and internal temperature reaches 165°F.

For the Grilled Asparagus

    Prepare the Asparagus

    While the chicken is marinating, wash and trim the asparagus stalks.

    Season the Asparagus

    In a bowl, toss the asparagus with olive oil, salt, and black pepper.

    Grill the Asparagus

    Place asparagus on the grill (you can use a grill basket) and cook for about 5-7 minutes, turning occasionally, until tender and slightly charred.

For the Garlic Mashed Potatoes

    Cook the Potatoes

    Peel and cut potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

    Prepare the Garlic

    While the potatoes are boiling, mince the garlic cloves.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, minced garlic, milk, salt, and black pepper. Mash until smooth and creamy.

For the Peach Whiskey Sauce

    Combine Sauce Ingredients

    In a saucepan, combine the peach preserves, whiskey, soy sauce, apple cider vinegar, cornstarch, and water.

    Cook the Sauce

    Heat over medium heat, stirring constantly until the sauce thickens, about 5-10 minutes. Remove from heat.
