Preparing the Fish

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until you achieve a smooth batter.

    Heat the Oil

    In a deep pot or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Cod

    Dip each cod fillet into the batter, ensuring it is fully coated.

    Fry the Fish

    Carefully place the battered cod fillets into the hot oil. Fry for about 4-6 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Cut the Potatoes

    Peel and cut the russet potatoes into thick fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes (or overnight) to remove excess starch.

    In a small bowl, mix together mayonnaise, chopped pickles, lemon juice, Dijon mustard, salt, and black pepper. Stir until well combined.
