Method

Cake Preparation

  1. 1

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the unsweetened chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring after each interval, until completely melted and smooth. Set aside to cool slightly.

  2. 2

    Mix Sugar and Eggs

In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale, about 3-4 minutes.

  3. 3

    Combine Mixtures

Slowly pour the melted chocolate and butter mixture into the egg mixture while whisking continuously to combine.

  4. 4

    Add Vanilla and Flour

Stir in the vanilla extract, all-purpose flour, and a pinch of salt until just combined. Do not overmix.

  5. 5

    Prepare Ramekins

Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and lightly dust with cocoa powder to prevent sticking.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  7. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the centers are soft. Keep an eye on them to ensure they don't overbake.

Serving Instructions

  1. 8

    Cool and Serve

Remove the cakes from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate. Gently tap to release the cake. Serve immediately with a scoop of vanilla ice cream on top.
