Method

Marinating the Chicken

    Prepare Marinade

    In a large mixing bowl, combine the buttermilk, hot sauce, salt, black pepper, garlic powder, and onion powder. Stir well until all ingredients are mixed.

    Marinate Chicken

    Add the chicken thighs to the buttermilk marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight for best results.

Breading the Chicken

    Prepare Breading Mixture

    In a separate bowl, mix together the all-purpose flour, paprika, cayenne pepper, salt, and black pepper.

    Bread the Chicken

    Remove the marinated chicken from the refrigerator. One piece at a time, dredge each chicken thigh in the flour mixture, shaking off excess flour. Place breaded chicken on a plate and let it rest for 10 minutes.

Frying the Chicken

    Heat Oil

    In a large heavy-bottomed pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Fry Chicken

    Carefully add the breaded chicken pieces to the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 6-8 minutes per side, or until golden brown and cooked through. Use a slotted spoon to remove the chicken and drain on paper towels.

Assembling the Sandwich

    Toast the Brioche Buns

    In a skillet, lightly toast the brioche buns until golden brown on both sides.

    On the bottom half of each toasted brioche bun, place a piece of fried chicken, top it with a slice of pepper jack cheese, a handful of butter lettuce, some pickles, and drizzle sweet chili sauce on top. Add the top half of the bun to complete the sandwich.
