Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the cavatappi noodles and cook according to the package instructions until al dente. Drain and set aside.

Making Cheese Sauce

    Prepare the Roux

    In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 2 minutes until slightly golden.

    Add Milk

    Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the mixture thickens, about 5-7 minutes.

    Incorporate Cheeses and Seasonings

    Remove the saucepan from heat and stir in the cheddar, Monterey Jack, and Parmesan cheeses until melted and smooth. Season with salt, black pepper, garlic powder, and onion powder.

Combining and Baking

    Merge Pasta and Sauce

    In a large mixing bowl, combine the cooked cavatappi noodles and the cheese sauce. Mix well until the noodles are evenly coated.

    Prepare Topping

    In a small bowl, mix the breadcrumbs with the melted butter. Stir in the chopped scallions.

    Assemble and Bake

    Preheat the oven to 350°F (175°C). Pour the mac and cheese mixture into a greased baking dish. Sprinkle the breadcrumb topping evenly over the top. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
