For the Chicken Sandwich

Prepare the Chicken
Preheat your grill to medium-high heat. Pat the chicken breasts dry with paper towels and rub them with olive oil, salt, black pepper, and garlic powder on both sides.

Grill the Chicken
Place the chicken breasts on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).

Add Bacon and Cheese
During the last 2 minutes of grilling, place the bacon slices on the grill to crisp up. Once the chicken is cooked, top each chicken breast with 2 slices of Swiss cheese and close the grill lid for 1-2 minutes to melt the cheese.

Toast the Buns
While the chicken is finishing, cut the brioche buns in half and toast them on the grill for about 1-2 minutes or until lightly golden.

Assemble the Sandwich
Layer the grilled chicken with melted Swiss cheese and crispy bacon on the bottom half of each toasted brioche bun. Top with the other half of the bun.
For the Sweet-Mayo Pub Sauce

Mix the Sauce
In a medium bowl, combine mayonnaise, honey, Dijon mustard, sweet relish, and garlic powder. Whisk until smooth and well combined.

Serve
Serve the sauce on the side for dipping or spread it directly onto the sandwich.
