Prepare the Catfish
In a bowl, combine the cornmeal, flour, salt, black pepper, and cayenne pepper. Dip each catfish fillet into the buttermilk, then dredge in the cornmeal mixture until fully coated.

Fry the Catfish
Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the coated catfish fillets in batches for about 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Croquettes
If using frozen jalapeño cheddar croquettes, prepare according to package instructions, typically baking or frying until golden and heated through.

Serve
On a plate, arrange the fried catfish fillets alongside the jalapeño cheddar croquettes. Serve with a side of tartar sauce for dipping.
