Preparing the Ribs

Rub the Ribs
Apply the BBQ rib rub generously over both sides of the pork ribs. Wrap the ribs in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Prepare the Onions
Slice the onions thinly and soak them in buttermilk for at least 1 hour.

Fry the Onions
In a bowl, mix the flour, cornstarch, salt, and pepper. Heat the vegetable oil in a deep fryer or large pot over medium-high heat. Dredge the soaked onions in the flour mixture and fry in batches until golden brown. Drain on paper towels.

Bake the Muffins
Pour the batter into a greased muffin tin and bake for 15-20 minutes, or until a toothpick comes out clean. Let cool slightly before serving.
