Preparing the Ribs

    Rub the Ribs

    Apply the BBQ rib rub generously over both sides of the pork ribs. Wrap the ribs in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

    Smoke the Ribs

    Preheat your smoker to 225°F (107°C). Soak the applewood chips in water for 30 minutes, then drain. Place the ribs in the smoker and add the applewood chips. Smoke for about 5-6 hours, or until the internal temperature reaches 190°F (88°C).

Fried Onion Straws

    Prepare the Onions

    Slice the onions thinly and soak them in buttermilk for at least 1 hour.

    Fry the Onions

    In a bowl, mix the flour, cornstarch, salt, and pepper. Heat the vegetable oil in a deep fryer or large pot over medium-high heat. Dredge the soaked onions in the flour mixture and fry in batches until golden brown. Drain on paper towels.

Cheddar Cornbread Muffins

    Mix the Ingredients

    Preheat the oven to 400°F (200°C). In a bowl, combine cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together milk, eggs, and melted butter. Combine the wet and dry ingredients, then fold in the cheddar cheese.

    Bake the Muffins

    Pour the batter into a greased muffin tin and bake for 15-20 minutes, or until a toothpick comes out clean. Let cool slightly before serving.
