    Prepare the Chicken

    Preheat your rotisserie smoker to 225°F (107°C). Rinse the whole chicken under cold water and pat dry with paper towels. Rub the chicken all over with olive oil.

    Season the Chicken

    In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture all over the chicken, making sure to get it under the skin for maximum flavor.

    Smoke the Chicken

    Place the seasoned chicken in the smoker and smoke for about 4-5 hours, or until the internal temperature reaches 165°F (74°C).

    Pull the Chicken

    Once cooked, remove the chicken from the smoker and let it rest for about 15 minutes. Use two forks to pull the meat apart into shredded pieces.

    Serve

    Toss the pulled chicken with BBQ sauce to taste. Serve on buns with coleslaw on the side or on top, if desired.
