    Prepare the Potatoes

    Wash and scrub the red potatoes thoroughly. Cut them into quarters and place them in a large pot. Fill the pot with water to cover the potatoes.

    Boil the Potatoes

    Bring the pot of water to a boil over medium-high heat. Once boiling, reduce the heat to medium and cook the potatoes for about 15-20 minutes, or until they are fork-tender.

    Drain and Mash

    Drain the cooked potatoes and return them to the pot. Add the unsalted butter, milk, salt, and black pepper. Mash the potatoes until creamy and smooth.

    Prepare the Gravy

    In a saucepan, combine the meat stock and bring it to a simmer. In a small bowl, mix the cornstarch with water until smooth, then add it to the simmering stock. Stir continuously until the gravy thickens.

    Serve

    Spoon the mashed potatoes onto plates and drizzle the brown gravy over the top. Serve immediately.
