Prepare Pork Skins
Rinse the pork skins and pat them dry with paper towels. Cut them into desired sizes (about 2-3 inches).

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Pork Skins
Carefully add a batch of pork skins to the hot oil. Fry until they puff up and become golden brown, about 2-4 minutes. Remove with a slotted spoon and drain on paper towels.

Season the Skins
While the pork skins are still hot, season them with salt, smoked paprika, and brown sugar for Sweet n’ Smoky flavor, or just salt for Plain, or drizzle with white vinegar for Salt & Vinegar.

Serve
Serve the fried pork skins hot with a side of Red Beans for dipping.
