    Prepare the Wings

    In a large bowl, combine chicken wings, olive oil, salt, pepper, and garlic powder. Toss to coat evenly.

    Preheat the Smoker

    Soak the hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Wings

    Place the wings in the smoker and add the hickory wood chips. Smoke the wings for about 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).

    Toss with Sauce

    Remove the wings from the smoker and toss them in your choice of sauce until well-coated.

    Prepare the Vegetables

    While the wings are smoking, cut the carrots and celery into sticks.

    Serve

    Serve the smoked chicken wings with carrot and celery sticks alongside ranch or blue cheese dressing for dipping.
