    Prepare the Cheddar Cornbread Muffins

    Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the cornmeal, flour, baking powder, sugar, salt, and pepper. In another bowl, whisk together the milk, eggs, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the shredded cheddar cheese. Grease a muffin tin and fill each cup about 2/3 full with the batter. Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.

    Prepare the Green Beans

    While the cornbread muffins are baking, bring a pot of salted water to a boil. Add the trimmed green beans and cook for 3-4 minutes until tender but still crisp. Drain and set aside.

    Make the Red Skinned Mashed Potatoes

    Peel and cut the red skinned potatoes into chunks. Boil in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot. Mash with a potato masher, adding salt, pepper, and a splash of milk to reach desired creaminess.

    Assemble the Bowl

    In a bowl, place a generous serving of red skinned mashed potatoes or steamed white rice. Top with the green beans and pour over the homemade smoked meat stock brown gravy. Add the cheddar cornbread muffin on the side.
