    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into even-sized sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

    Heat the Oil

    In a deep fryer or a large, heavy pot, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Remove the potatoes from the water and dry them thoroughly with a clean towel. Carefully add a handful of potatoes to the hot oil, being careful not to overcrowd the pot. Fry for about 5-7 minutes, or until golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. While still hot, season with salt, black pepper, and garlic powder to taste.

    Serve

    Serve the fresh cut fries immediately while hot, optionally with your favorite dipping sauce.
