    Prepare the Brisket

    In a small bowl, mix brown sugar, paprika, garlic powder, onion powder, black pepper, and salt to create a rub. Rub the mixture all over the brisket, making sure to cover it evenly.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and add wood chips for smoking. Smoke for about 10-12 hours, or until the internal temperature reaches 200°F (93°C).

    Rest the Brisket

    Once cooked, remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.

    Prepare Sandwiches

    Slice the brisket thinly or chop it into pieces. Toast the sandwich rolls if desired, then layer the brisket on the rolls. Add BBQ sauce and pickles to taste.
