Prepare the Garbanzo Beans
Soak the garbanzo beans overnight in plenty of water. Drain and rinse. In a pot, add the beans, baking soda, and enough water to cover. Bring to a boil, then reduce the heat and simmer for about 1 hour or until the beans are tender. Drain the beans and let cool.

Roast the Red Pepper
Preheat the oven to 400°F (200°C). Cut the red bell pepper in half, removing the seeds and stem. Place the halves on a baking sheet, cut side down, and roast for about 20-25 minutes until the skin is blistered. Remove from the oven and let cool. Once cool, peel off the skin.

Blend the Ingredients
In a food processor, combine the cooked garbanzo beans, roasted red pepper, salt, citric acid, tahini, and vegetable oil. Blend until smooth, adding a little water if necessary to reach the desired consistency.

Serve
Transfer the hummus to a serving bowl. Drizzle with a little more vegetable oil and serve with pita bread or fresh vegetables.
