In a small bowl, combine warm water (110°F/45°C), sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Ingredients
In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the activated yeast mixture and olive oil.

Knead the Dough
Mix until a dough forms. Transfer to a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape Pitas
Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and then flatten it into a circle about 1/4 inch thick.

Second Rise
Cover the flattened circles with a damp cloth and let them rest for about 30 minutes.

Preheat your oven to 475°F (245°C) with a baking stone or a baking sheet inside.

Place the dough circles on the hot baking stone or sheet and bake for about 5-7 minutes or until they puff up and are lightly golden.
