Roasting Sesame Seeds
Preheat your oven to 350°F (175°C). Spread the sesame seeds on a baking sheet and roast for about 10-12 minutes, stirring occasionally, until they are golden and fragrant. Be careful not to burn them.

Blending Ingredients
Allow the roasted sesame seeds to cool slightly, then transfer them to a food processor. Add the lemon juice, salt, and water. Blend until smooth and creamy, scraping down the sides as necessary.

Adjusting Consistency
If the tahini is too thick, add more water, one tablespoon at a time, until you reach your desired consistency.

Transfer the tahini to an airtight container and store it in the refrigerator for up to a month.
