Soak the Chickpeas
Rinse the dried chickpeas and soak them in water overnight or for at least 8 hours.

Prepare the Mixture
Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, onion, garlic, cumin, coriander, baking powder, salt, and pepper. Pulse until the mixture is coarse but well combined.

Add Flour
Transfer the mixture to a bowl, add the flour, and mix until incorporated. If the mixture is too wet, add more flour as needed.

Shape the Falafel
Form the mixture into small balls or patties, about 1-2 inches in diameter.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium heat until hot (about 350°F or 175°C).

Fry the Falafel
Carefully drop the falafel balls into the hot oil, frying in batches. Fry for about 3-4 minutes or until golden brown and crispy on all sides.

Remove the falafel from the oil and drain on paper towels. Serve warm with tahini sauce or in a pita with salad.
