Prepare the chickpeas
In a pot, combine the garbanzo beans, baking soda, and enough water to cover the beans. Let them soak for at least 8 hours or overnight. After soaking, drain and rinse the beans.

Cook the chickpeas
In a pot, cover the drained chickpeas with fresh water and bring to a boil. Reduce the heat and let simmer for about 1 hour, or until the beans are tender. Drain and let cool slightly.

Taste and adjust
Taste the hummus and adjust seasoning with additional salt, lemon juice, or oil if necessary.

Serve
Transfer the cilantro hummus to a serving bowl and drizzle with olive oil and sprinkle with additional chopped cilantro if desired. Serve with pita bread or fresh vegetables.
