Preparation of Ingredients

    Prepare Sweetbreads

    Begin by rinsing the sweetbreads under cold water. Soak them in salted water for about 2 hours to remove impurities. After soaking, blanch them in simmering water for 5 minutes, then cool them in an ice bath.

    Prepare Apples

    Core and slice the Colorado apples into thin wedges, setting them aside for garnish.

    Prepare Buckwheat

    Rinse the buckwheat under cold water and drain well.

Cooking the Meat

    Sear Veal Loin

    Season the veal loin generously with salt and pepper. Heat a skillet over medium-high heat and add a tablespoon of oil. Sear the veal loin on all sides until golden brown, about 3-4 minutes per side.

    Roast Veal Loin

    After searing, transfer the veal to a preheated oven at 180°C (350°F) and roast for 15-20 minutes, or until it reaches an internal temperature of 60°C (140°F). Allow it to rest for 10 minutes before slicing.

Cooking the Sweetbreads

    Sauté Sweetbreads

    In the same skillet used for the veal, add the blanched sweetbreads and sauté them over medium heat for 5-7 minutes until they are golden and crispy. Season with salt and sprinkle with caraway seeds.

Cooking the Buckwheat

    Cook Buckwheat

    In a pot, combine the rinsed buckwheat with 2 cups of water. Bring to a boil, then reduce the heat to low and simmer covered for about 10-12 minutes until the water is absorbed and the buckwheat is tender.

Plating

    Plate the Dish

    On a plate, create a bed of cooked buckwheat. Arrange the sliced veal loin on top, followed by the sautéed sweetbreads. Garnish with apple wedges and drizzle with mustard.
