Pasta Preparation

    Make the Dough

    In a mixing bowl, combine carob flour, all-purpose flour, and salt. Slowly add water while mixing until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.

    Roll Out the Dough

    After resting, divide the dough into four pieces. Roll each piece out thinly and cut into your desired pasta shape.

Wild Boar Ragu Preparation

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add chopped onion, carrot, celery, and garlic. Sauté until vegetables are soft, about 5-7 minutes.

    Brown the Meat

    Add the wild boar meat to the skillet and cook until browned on all sides, about 10 minutes.

    Add Mushrooms and Liquids

    Stir in the spiced porcini mushrooms, red wine, and beef broth. Bring to a simmer.

    Season the Ragu

    Add the bay leaf, salt, and black pepper. Cover and let it simmer on low heat for 1.5 to 2 hours, stirring occasionally.

Serving

    Combine and Garnish

    Cook the pasta in boiling salted water until al dente. Drain and toss with the wild boar ragu. Serve garnished with fresh lovage and chopped medjool dates.
