Harvesting Grapes
Select ripe Ribolla Gialla grapes from the vineyard. Ensure the grapes are healthy and free from any rot or disease.

Crushing and Pressing
Crush the harvested grapes gently to release the juice. Press the crushed grapes to separate the juice from the skins and seeds.

Fermentation
In a fermentation vessel, combine the grape juice with yeast and sugar. Allow the mixture to ferment at a controlled temperature for approximately 10 days.

Addition of Acid
After fermentation, add tartaric acid to the wine to balance the acidity. Stir well to ensure it is evenly distributed.

Riddling and Disgorgement
After secondary fermentation, gradually tilt and rotate the bottles to consolidate sediment at the neck. Disgorge sediment by freezing the necks and removing the ice plug.

Cork the bottles and age the wine for an additional 3 months in a cool, dark place to allow flavors to mature.
