Harvesting Grapes
Carefully select and hand-pick 60 kg of Grenache grapes, 30 kg of Syrah grapes, and 10 kg of Mourvèdre grapes from the vineyard during the optimal ripening period.

Crushing and Destemming
Once the grapes are harvested, destem and crush them to release the juice. Place the crushed grapes into a fermentation tank.

Adding Yeast
Sprinkle 15 g of yeast evenly over the crushed grape mixture to initiate fermentation.

Fermentation Process
Allow the mixture to ferment at controlled temperatures for about 10-14 days. Monitor the fermentation process closely, stirring the mixture daily.

Pressing
After fermentation is complete, press the mixture to separate the liquid wine from the solids. Collect the free-run wine and press wine separately.

Adding Sulfites
Add 5 g of sulfites to the collected wine to preserve its freshness and prevent oxidation.

Dilution with Water
If necessary, dilute the wine with up to 2 liters of water to achieve the desired balance and alcohol content.

Aging
Transfer the wine to oak barrels for aging. Allow it to mature for a minimum of 6 months to develop complex flavors.

Finally, bottle the wine in suitable containers, label them, and store them in a cool, dark place until ready for consumption.
