    Prepare the Ingredients

    Start by gathering all your ingredients. Finely chop the lemon thyme, peel and slice the Bartlett pear, and crumble the Castelmagno cheese.

    Cook the Sausage

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the lamb sausage and cook until browned and cooked through, about 8-10 minutes. Break it into smaller pieces with a spatula as it cooks.

    Add Pear and Thyme

    Once the sausage is cooked, add the sliced Bartlett pear and lemon thyme to the skillet. Season with salt and black pepper. Sauté for an additional 3-4 minutes until the pears are softened.

    Cook the Pasta

    In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Combine Pasta and Sausage Mixture

    Add the drained pasta directly to the skillet with the sausage and pear mixture. Toss everything together, adding reserved pasta water a little at a time to create a light sauce.

    Finish with Cheese

    Remove from heat and fold in the crumbled Castelmagno cheese until melted and well combined. Adjust seasoning with more salt and pepper if needed.

    Plate the pasta and garnish with additional lemon thyme and crumbled Castelmagno cheese. Serve immediately.
