Prepare the Farro
In a medium pot, bring 2 cups of salted water to a boil. Add the green farro and reduce to a simmer. Cook for about 20-25 minutes or until tender. Drain and set aside.

Cook the Salsiccia
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the salsiccia, breaking it apart with a spoon, and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the sliced fennel and minced garlic, and sauté for about 5 minutes until the fennel is soft.

Combine Ingredients
Add the cooked salsiccia back to the skillet, along with the preserved lemon, fish stock, salt, and black pepper. Bring to a simmer and let cook for an additional 5 minutes to allow the flavors to meld.

Serve
In a serving bowl, mix the cooked farro with the shrimp and sausage mixture. Garnish with fresh parsley and serve warm.
