    Chop the vegetables

    Dice the bell peppers, onion, mushrooms, and zucchini into small, uniform pieces to ensure even cooking.

    Prepare the hoagie rolls

    Slice each hoagie roll lengthwise, but not all the way through, to create a pocket for the veggies and cheese.

    Sauté the vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped bell peppers, onion, mushrooms, and zucchini. Sprinkle with garlic powder, salt, and black pepper. Sauté for about 8-10 minutes or until the vegetables are tender and slightly caramelized.

    Melt the cheese

    Once the vegetables are cooked, reduce the heat to low. Place the slices of provolone cheese on top of the sautéed vegetables. Cover the skillet with a lid and let it sit for about 2-3 minutes, or until the cheese is melted.

Assembly

    Fill the hoagie rolls

    Remove the skillet from heat. Carefully spoon the cheesy vegetable mixture into each prepared hoagie roll.

    Serve

    Serve the veggie cheesesteaks warm, optionally with additional toppings such as hot sauce or pickled jalapeños.
