    Prepare the Sweet Onions

    Peel and slice the sweet onions into thick rings. Drizzle with olive oil, and season with salt and black pepper.

    Grill the Onions

    Preheat a grill or grill pan over medium heat. Place the seasoned onion rings on the grill and cook for about 5-7 minutes on each side, or until they are tender and have nice grill marks. Remove from the grill and set aside.

Cooking the Eggs

    Cook the Eggs

    In a non-stick skillet, heat a little olive oil over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes. Season with salt and pepper to taste.

Assembly

    Assemble the Dish

    On a serving plate, place the grilled sweet onions as the base. Top with the cooked eggs. If desired, add sliced avocado and sprinkle fresh cilantro over the top. Add sour cream and cheddar cheese as optional toppings.
