Prepare the Vegetables
Slice the sweet onions and bell peppers into thin strips.

Grill the Vegetables
In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add the sliced sweet onions and bell peppers. Cook for about 8-10 minutes, stirring occasionally, until they are soft and slightly caramelized. Remove from skillet and set aside.

Melt the Cheese
Place the slices of provolone cheese over the steak and vegetable mixture. Cover the skillet and let it sit for 2-3 minutes, or until the cheese has melted.

Assemble the Hoagies
Slice the hoagie rolls lengthwise. Fill each roll with the steak and vegetable mixture topped with melted provolone cheese.
