    Thinly slice the onions and bell peppers (red, yellow, and orange) into strips. Aim for uniform thickness to ensure even cooking.

    Prepare the Cheese

    Crumble the Amish blue cheese into small pieces. Set aside for topping.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the sliced onions and peppers, sprinkle with salt, black pepper, and garlic powder. Sauté for about 10-12 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.

    Add the Cheese

    Once the vegetables are cooked, remove from heat. Sprinkle the crumbled Amish blue cheese over the sautéed vegetables while they are still warm, allowing the cheese to melt slightly.
