    Prepare Onions

    Slice the medium onion into thin rings.

    Prepare Pickles

    Slice the pickles into thin rounds or spears based on preference.

Cooking

    Melt Butter

    In a skillet, melt the tablespoon of butter over medium heat.

    Cook Onions

    Add the sliced onions to the skillet, sprinkle with salt and black pepper, and sauté until they are soft and caramelized, about 5-7 minutes.

    Heat Pastrami

    In the same skillet, layer the pastrami over the cooked onions, allowing it to heat through for about 2-3 minutes.

    Toast Bread

    While the pastrami is heating, toast the slices of bread in a toaster or on a separate skillet until golden brown.

Assembly

    Spread Mustard

    Spread Goulden's mustard on one side of each toasted slice of bread.

    Add Pastrami & Onions

    Layer the heated pastrami and onions on one slice of bread.

    Add Cheese

    Place the Swiss cheese slices on top of the pastrami.

    Finish Sandwich

    Top with the sliced pickles and place the second slice of bread on top, mustard side down.

Final Touch

    Grill Sandwich

    Press down gently on the sandwich and return it to the skillet for another 2-3 minutes per side to melt the cheese and toast the bread further.

    Once the cheese is melted and the bread is golden brown, remove from skillet, slice in half, and serve immediately.
