    In a separate bowl, mix black pepper, coriander seeds, garlic powder, and paprika. Once the beef has brined for 5 days, remove it from the brine and pat dry.

    Generously coat the brisket with the spice rub. Wrap it tightly in plastic wrap and refrigerate for an additional 5 days.

    Preheat your smoker or oven to 225°F (107°C). Smoke or roast the brisket for about 6-8 hours, or until the internal temperature reaches 190°F (88°C). Allow the pastrami to rest for an hour before slicing.
