Steak Preparation

    Season the Steak

    Rub the ribeye steaks with olive oil, and season them generously with salt, black pepper, and garlic powder on both sides.

    Grill the Steak

    Preheat your grill to medium-high heat. Place the seasoned ribeye steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let them rest for 5 minutes before slicing.

    Prepare the Potatoes

    Wash and scrub the Idaho potatoes thoroughly. Pierce them several times with a fork and wrap each potato in aluminum foil.

    Bake the Potatoes

    Place the wrapped potatoes directly on the grill or in the oven at 400°F (200°C) and bake for about 45-60 minutes, or until tender when pierced with a fork.

    Make the Cheddar Topping

    Once the potatoes are cooked, carefully unwrap them. Cut each potato open and fluff the insides with a fork. Add butter, salt, and black pepper to taste. Sprinkle with shredded cheddar cheese and chopped chives.

    Slice the rested ribeye steaks against the grain into strips. Serve the sliced steak alongside the loaded Idaho potatoes, garnished with additional chives if desired.
