    Prepare Ingredients

    Chop the corned beef into small bite-sized pieces. Drain excess liquid from the sauerkraut and set aside. Grate the Swiss cheese if not pre-grated.

    Cook the Eggs

    In a large skillet, heat a tablespoon of oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness (scrambled, fried, or poached). Season with salt and pepper to taste.

    Layer the Ingredients

    Once the eggs are cooked, layer the corned beef evenly over the eggs in the skillet. Add the sauerkraut on top of the corned beef.

    Melt the Cheese

    Top the sauerkraut with the grated Swiss cheese. Cover the skillet with a lid to allow the cheese to melt, approximately 2-3 minutes.
