Prepare Ingredients
Chop the corned beef into small bite-sized pieces. Drain excess liquid from the sauerkraut and set aside. Grate the Swiss cheese if not pre-grated.

Cook the Eggs
In a large skillet, heat a tablespoon of oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness (scrambled, fried, or poached). Season with salt and pepper to taste.

Melt the Cheese
Top the sauerkraut with the grated Swiss cheese. Cover the skillet with a lid to allow the cheese to melt, approximately 2-3 minutes.

Dress the Dish
Once the cheese has melted, drizzle the Russian dressing over the top of the dish.

Carefully transfer the egg-cellent creation to a serving plate and serve hot.
