Prepare the Ingredients
Dice the onion, green bell pepper, and celery. Mince the garlic and chop the green onions. Slice the Andouille sausage and chicken thighs into bite-sized pieces.

Season the Chicken
In a bowl, combine the chicken thighs with 1 tablespoon of Cajun seasoning, salt, and black pepper. Mix well and set aside.

Add Garlic and Sausage
Stir in the minced garlic and sliced Andouille sausage. Cook for an additional 3-4 minutes until the sausage starts to brown.

Cook the Chicken
Add the seasoned chicken thighs to the pot and cook until browned on all sides, about 5 minutes.

Add Liquid and Rice
Pour in the chicken broth and bring to a simmer. Stir in the long-grain rice, the remaining Cajun seasoning, and bay leaves.
