Method

Preparation of Ingredients

  1. 1

    Prepare the Chicken

Season the chicken breasts with salt and black pepper. Set aside.

  2. 2

    Slice the Vegetables

Thinly slice the sweet onion and the bell peppers (red, yellow, and orange) into strips.

Grilling

  1. 3

    Grill the Chicken

Preheat your grill to medium-high heat. Grill the chicken breasts for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F/74°C). Remove from grill and let rest.

  2. 4

    Grill the Vegetables

On the same grill, add the sliced sweet onion and bell peppers. Grill for about 5-6 minutes or until they are tender and have nice grill marks. Turn occasionally to avoid burning.

Making the Dressing

  1. 5

    Combine Dressing Ingredients

In a small bowl, whisk together olive oil, balsamic vinegar, honey, garlic powder, salt, and black pepper until well combined.

Assembling the Dish

  1. 6

    Assemble the Birmingham

On a serving plate, place the grilled chicken breast. Top it with the grilled sweet onion and bell peppers. Drizzle the dressing over the top and sprinkle cheddar cheese on the chicken and vegetables.
