    Slice the Steak

    Thinly slice the ribeye steak against the grain. Aim for slices about 1/4 inch thick for tender pieces of meat.

    Prepare the Vegetables

    Slice the green bell pepper, onion, and mushrooms into thin strips. Set aside.

Cooking

    Cook the Steak

    In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the sliced ribeye steak and season with salt and pepper. Cook for about 3-4 minutes or until browned, stirring occasionally.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell pepper, onion, and mushrooms. Sauté for about 5-7 minutes until the vegetables are tender and slightly caramelized.

    Combine and Melt Cheese

    Return the cooked steak to the skillet with the vegetables. Mix well to combine. Place the provolone cheese slices on top and cover the skillet with a lid. Let it cook for about 2-3 minutes, or until the cheese is melted.

    While the cheese is melting, slice the hoagie rolls down the center without cutting all the way through.

    Once the cheese has melted, carefully spoon the steak and vegetable mixture into each hoagie roll. Be generous!
